Concrete Foundation Added for Downtown Disney Restaurants Replacing Tortilla Jo’s

A concrete foundation has been added as crews work to build two new restaurants, which replace Tortilla Jo’s in Downtown Disney at the Disneyland Resort.

Recent construction for the two new restaurants includes the addition of concrete foundation. The area is mostly closed off with various tan and black scrims, but we were able to see the progress from the Monorail.

We also saw scaffolding, orange safety cones, and railing at the construction site.

The only thing that remains of Tortilla Jo’s is the brick structure that remained there after demolition was completed earlier this summer. It’s possible this will be used for the new restaurants.

Tortilla Jo’s permanently closed in March 2024, and is being replaced by Arthur & Sons Steak and Bourbon and Pearl’s Roadside BBQ. These new restaurants from Michelin-starred Chef Joe Isidori are expected to open in 2026.

Arthur & Sons Steak and Bourbon will be a full-service steakhouse with a sophisticated ambiance, while Pearl’s Roadside BBQ will offer a more casual barbecue experience.
